My job today is to be a mindful, fit, and thinking chef and to connect and share with others.

Favorite Midnight Snack:  

Hot chocolate in the winter and bittersweet chocolate sorbet in the summer.

Last Meal You Cooked:  

Last night I made mung beans with asparagus salad and a toasted sesame-fish sauce-lemon vinaigrette with pea shoots and cornbread with spelt and onions, cumin and serrano chili.

What’s Playing in Your Kitchen:

Karsh Kale

Fun Fact:

I have been studying Iaido, a form of Japanese Samurai martial art and am using it in a performance piece with a croquembouche (pastry).

About 200 dinners for the restaurant!

What’s Playing in Your Kitchen:

It depends on what the mood is . . . When I am creating its Verde, when we are butchering, the Cure, when we are in service or getting ready for it, silence . . . I like the discipline of having a quiet kitchen and listening to the sounds of service. Dinner party at my house though? Always Sinatra.

I love McNuggets and Krug Champagne . . . Great pairing.
